How long can boiled beets be stored in the refrigerator?

Beetroot is a useful and beloved root crop, without which it is impossible to do in the preparation of many, including holiday, dishes. Usually this vegetable is cooked with a margin, since it will take at least an hour to cook it. Therefore, the housewives are very worried about the natural question: how many boiled beets are stored in the refrigerator? What is the best way to prepare and pack it so that it remains beautiful and usable for as long as possible?

Boiled beets

How to keep boiled beets in the refrigerator?

After cooking, vegetables usually lose the bulk of their nutrients - but not beets. Of course, one can’t do without partial destruction of vitamin C, but there are still a number of useful compounds that are not afraid of heat treatment. Cooked beetroot (the so-called beets in the south) retains healing qualities and at the same time is much tastier than raw. It is a pity that storing such a product for a long time will not work.

If in advance it is decided to leave the boiled root crop in reserve, you must remember the following rules:

  • After cooking, the water from the pan should be drained immediately. The longer the product will be in a hot liquid, the less likely it is for long-term storage. In addition, the vegetable will lose a bright burgundy color and lose many useful qualities.
  • Without a refrigerator at room temperature, the cooked vegetable will last about 12 hours without spoilage. It is necessary to dry the beetroot without removing the peel, transfer to a dry pan and cover.
  • In the refrigerator, peeled and cut beets will be stored much less than beets with peel. Therefore, in order to increase the shelf life, it is not necessary to pre-clean all root crops at once. It is better to clean them as necessary, and put the rest into a refrigerator. However, the peeled product will perfectly lie 24 hours on the shelf of the refrigerator, if it is previously placed in a sealed container, or even better - in a vacuum bag.
  • Boiled beets in the peel can be stored at a temperature of + 6 ° C to + 10 ° C for 10 days. This is the maximum indicator and it depends on various factors: variety, quality of preparation, features of the refrigerator. An indispensable condition is to keep it in a closed container or a special bag that restricts the access of oxygen.

During the whole time that the beetroot is stored, it is necessary to periodically look in the package and check the status of the product. This will eliminate unpleasant surprises, and at the most inopportune moment it will not turn out that the vegetable is unsuitable for use.

Frozen beetroot

Storage of beets in the freezer

Raw beets are stored for several months in a cellar or basement. This is an incredibly stale product that does not require special storage conditions - if only there would be no frost and strong humidity. However, residents of city apartments are often deprived of the opportunity to keep large supplies of fresh vegetables and are forced to resort to freezers.

How many boiled beets can be stored in the freezer depends on several factors.

  • chamber temperature;
  • varieties of root vegetables;
  • cooking method.

At a temperature of -10 ° C, the shelf life of beets will be no more than 3 months. If the chamber is -20 ° C, vegetables are stored longer - up to six months. At the same time, they retain quite a lot of useful substances, although less than in freshly cooked root crops.

Before freezing, the root crops are boiled, freed from the peel, cut into cubes, slices or tinder on a coarse grater and put into airtight bags or food containers.

Any product, and especially beets, should not be frozen twice. When re-frozen, vegetables lose all remaining useful properties.

Experienced housewives pack the vegetables prepared for freezing in small bags “at once” and indicate on the bag the date the blank was placed in the freezer. This will make it easy to track when the expiration date of the frozen product has expired.

Boiled beets are perfectly stored in the refrigerator and freezer, while almost losing their taste and aesthetic qualities. If you need to quickly cook a herring under a fur coat, borsch or add a vegetable to some salad, it is very convenient to have such a preparation at home. The main thing is to properly pack the product and observe storage conditions.
